Munchie Monday- SUPER Soft And Delicious Potato bread

This bread dough can be used for just about ANYTHING, cinnamon rolls, holiday breads, rolls and everything in between.  One thing's for sure, there wont be any left for a photo!




SUPER Soft And Delicious Potato Bread (otherwise known as THE BEST BREAD ON EARTH!)

1 T yeast
1 1/2 C lukewarm potato water (plain water works too, but potato is BEST!)
1/2 cup honey
1 1/2 tsp salt
2 eggs
1/2 cup butter (or oil- olive, almond, walnut, or ANY nut oil is great too!)
1 cup lukewarm mashed potatoes
5 cups unbleached naturally white flour (whole wheat is fine but gives bread a denser texture)
1/2 cup dry milk powder
1/2 cup wheat germ (optional, but worth it!)
1/2 cup ground flax (optional, but worth it!)


Directions:

Dissolve yeast in water.  Add honey, salt, eggs, butter, potatoes, and any optional ingredients.  Stir in flour to make a pliable dough.  Knead 10 minutes or so, it should be smooth and rubbery texture -but silky soft as well ( I suggest kneading until your hands fall off, IT'S WORTH IT!).  Let rise until doubled in a warm place, or cover and let rise in the refrigerator for at least 2 hours.  Form dough into 2 loaves and put into 2 greased bread pans.  Bake rolls at 350 degrees for 30 to 40 minutes.  Recipe can be halved or doubled.

i used to love irish potato bread and havent had it in yeeeeeeeeears! never tried it homemade! may have to give this one a shot thanks for posting!
