These babies taste like any other sweet yummy caramels, but they don't come with as big of a nasty sugar rush and inevitable guilt associated with their delicious look-a-likes.
Agave Caramels
1 cup butter
2 cups agave
2 cups whipping cream
1 cup brown sugar
1 tsp vanilla
sea salt
line a 9 inch pan with plastic wrap. Melt butter over medium high heat. Add agave, cream, and brown sugar. Mix well. Cool till boiling. STIR CONTINUALLY TO PREVENT BURNING! Boil till temerature is at 250 to 255 degrees F (45 minutes or so). Remove from heat, mix in vanilla and pour into prepared pan. Sprinkle evenly with salt. Cool in fridge, cut and serve. You can store these in the fridge for up to one month. (as if they will LAST that long!!)
