Monday Munchies: Corn Bisque

This is really simple, and really yummy! Whip this on up in no time and serve with some soft french bread and a good book to enjoy while you savor this cheese-y potato-y corn-y soup!


Corn Bisque

1 16 oz pkg smoked sausage (chicken, turkey, ect is ok too)
1 chopped medium onion
1/4 cup butter
1/4 cup flour
1/2 tsp salt
4 cups milk (any percent, although whole makes for a good thick soup)
1 can whole kernel corn, drained
2 cups cooked chopped potatoes (any color)
1 cup shredded cheddar cheese
1/4 tsp pepper
1/4 tsp garlic powder (or 1 large clove, minced)

Extras: cooked chopped bacon, green onions, chopped cooked carrots, broccoli, ect!

Saute onions (and fresh garlic if you are using it) in butter.  Add flour, salt, pepper (and garlic powder if using it).  Cook 1 minute.  Add milk and boil for 1 minute.  Add corn and chopped sausage.  Bring to a boil and reduce and simmer for 10 minutes.  Stir in potatoes and cheddar and heat through.  Top with a little cheese as a garnish.

Eat and enjoy!
