I honor of Valentines day I decided to get crazy with the bright blue and pink fingernail polish! I think this is the start of a tradition! It turned out better than I expected, (I think what I expected was probably a pink blobby mess on my fingers:)

ERRANDS...ick

Grocery shopping today...sigh...but that will also force me away from the computer and give me more chances to crochet, which I have still been seriously neglecting! Well anyways, I am excited because I am having created a special badge for an award I really want to start giving out, so be on the watch in the next few days for that! Have a great day everyone and keep on trucking! :)

Take the Uglie Undies Pledge!

So I found this cute little blog where a woman by the name of Shelly Stout (who has graciously become a new follower of mine- thanks Shelly!) has had the awesome idea to urge women to clean out their underwear drawers and say goodbye to all the old , stained, ripped, and otherwise destroyed and dying underwear inhabiting it--
What a novel idea, and it is amazing how something so simple can really make all the difference in your day! Our underwear has the strange tendency to be able to control how we about our self, and I say, go all out and make yourself feel sexy! Go get yourself some nice, frilly, soft, (fur covered if you wish) and AFFORDABLE- underwear and stock that drawer FULL of them! You will be glad you did!
(If you are feeling super GREEN go ahead and MAKE them out of your recycled t shirts! I have seen some pretty awesome underwear made out of them , I say its free and it saves your favorite t shirts you cant let go of, so 2 birds with one stone!)

Take the Pledge and take back your inner WILDCAT!

(click on pic above to take you there!)

Mind Mould Thursday

So this is my MOST favorite quote on earth, and I thought I would share it with all of you! If anyone knows about "The Secret" you will really appreciate this quote. For those of you who do not know about The Secret, check out this page:
http://www.thesecret.tv/index.html

As a Man Thinketh...

James Allen 1902

"Mind is the Master power that moulds and makes,
And Man is Mind, and evermore he takes
The tool of Thought, and, shaping what he wills,
Brings forth a thousand joys, a thousand ills:—
He thinks in secret, and it comes to pass:
Environment is but his looking-glass."

Today has been a good day!

So my hubby got himself into a little hot water with me this morning before work, and as I was brooding about it all day, he had plans to reclaim my heart. He showed up with a big bag of goodies, filled with TWO giant boxes of chocolate, THREE cards, one of which had an adorable dog that said" somthing went wrong, I think it was me, I'm sorry" and a yummy pumpkin spice candle, and a jar of huckleberry jam (I love toast!) It was also filled with THREE bouquets of flowers, and a single rose...NOW how am I supposed to be angry?? GRRR, I think he WON this round!
It made me laugh because it reminded me of a spoof on the "keep calm and carry on" poster which said, "Ugly cry and He'll give you what you want" (by sassypackratstudios on Etsy)

My Workspace was featured today!

Tuesday Tips

So in an article in Family Fun magazine today, I found a very interesting article on sweet potatoes.

It says that according to the nonprofit Center for Science in the Public Interest, they are one of the most nutritious vegetables around. They are full of vitamins A and C as well as potassium, fiber, and disease fighting phytonutrients found in all colorful fruits and veggies. They also say that adding a pat of fat such as butter helps you absorb the vitamin C better (although I personally recommend a tablespoon of cold press virgin coconut oil , YUM).

Here is some more info about the serious benefits of Vitamin C:
http://recipes.howstuffworks.com/vitamin-c-benefits.htm

As well as potassium:
http://www.organicfacts.net/health-benefits/minerals/health-benefits-of-potassium.html

Here are some awesome recipes to incorporate sweet potatoes into your diet that don't include the traditional marshmallow casserole :)

With all the amazing benefits fitting into one small orange tuber, I ask you this.....

HAVE YOU HAD YOUR SWEET POTATO TODAY?

Munchie Monday: from hensforth on.......

So in thinking of things to write about, one thing that has always been high on the list is my many recipes. I love healthy food that tastes not only great, but looks and smells that way too :). As many people already know, sometimes "healthy" foods mean tasteless and resembling cardboard. I have made it my mission to eat well and taste well too! SO, without further adieu, I give you the first of my special recipes, which I decided on In honor of Valentines Day, which is fast approaching. Whip this up in a half hour and enjoy it the rest of the day!

Pink Raspberry Agave Marshmallows

INGREDIENTS

1 cup agave
2 envelopes unflavored gelatin
1/2 tsp vanilla
1/2 tsp raspberry flavoring
6 T water
1/4 tsp salt
2 drops red food coloring (optional)

DIRECTIONS

Boil agave on stove top, stirring occasionally.

Warm water in microwave for 1 minute or less (depending on the microwave) and dissolve both packets of gelatin in it, stirring out any chunks.

Pour agave into mixing bowl.

Add in gelatin mixture, (and color)

Beat with electric whisk for 10 to 15 minutes, till frothy and light light pink (if using color)

Dust square pan with powdered sugar, flour, or (for best quality) cornstarch.

Pour marshmallow cream into pan and leave to set.

(If you cant wait, throw it in the freezer for 15 minutes!)
(also, if you need it for marshmallow crispies or whatever, instead of pouring into pan, mix in other ingredients and then set in pan)

When completely set, slice in squares and dust with more cornstarch, and serve.

I bet you cant tell the difference, they taste and feel EXACTLY like ones made with corn syrup!

There you have it, a tasty guilt free Valentines treat!

Happy Munching!
